Red Wine Vinegar

When we first starting making wine back in 1991, Alex Corban said that we should have a vinegar barrel next to our house. This would provide the basic vinegar for the kitchen. And he provided his own ‘mother’ to start us going.

This vinegar is some of the original wine put into this barrel. It has been aged in oak for 10 years, and hence, is extremely mellow, soft and delicious.

Use it sparingly as you would with any premium vinegar. Or take a teaspoon a day to aid with your digestion.
